Easy recipes for any time of the day

1. Oatmeal: Start your day on a healthy note! Don’t forget, breakfast is the most important meal of the day.

Ingredients: 3 cups water ; 2 cups oats ; 2/3 cup sugar ; 1/8 tsp salt ; 1 cup  fresh blueberries or frozen blueberries ; 1 banana ; 2 tbs refrigerated French vanilla non-dairy coffee creamer.

Method: In a large saucepan bring water to a boil. Stir in the oats, sugar and salt. Remove from the heat and stir in the blueberries, banana, and creamer.

2. Bagel and Cream Cheese with Tomato and Cucumber: Healthy, yummy goodness for breakfast or snack time.

Ingredients: 2 bagels, split in half ; 1/2 cup cream cheese ; 1  cucumber ; 1/2 plum tomato, cut into wedges.

Method: Toast the bagel halves and spread each with the cream cheese. Cut the cucumber into rounds. Cut the tomato into 4 wedges and use one on each bagel half to form a smile.

3. Eggs with Tortilla Chips, Salsa, and Cheese: Salsa goodness with tons of cheese!

Ingredients: 1 1/2 tbs unsalted butter ; 10 eggs ; 2 tbs milk or water ; 1 tsp kosher salt ; 1/4 tsp freshly ground black pepper ; 1 cup shredded Monterey jack cheese ; 3/4 cup salsa (drained) ; 1 cup crushed tortilla chips.

Method: Heat butter in a large nonstick skillet over medium heat. Meanwhile, in a large bowl, whisk together the eggs, milk, 1 tsp kosher salt, and 1/4 tsp pepper. Pour into the pan and cook, stirring occasionally for 4 to 5 minutes, adding cheese just before they’re set. Fold in salsa and chips.

4. Pinto Bean and Cheese Tacos: Mexican splendor.

Ingredients: 15-ounce can pinto beans, rinsed ; 3/4 cup mild salsa; 1 heart of romaine ; 8 taco shells; 1 cup shredded Cheddar.

Method: In a small microwave-proof bowl, combine the beans and ½ cup of the salsa. Microwave on high until hot, 1 to 2 minutes. Tear the lettuce into bite-size pieces. Divide the bean mixture among the taco shells and top with the lettuce, Cheddar, and remaining ¼ cup of salsa.

5. Macaroni and cheese: The easiest bowl of yumminess!

Ingredients: 1/2 pound cooked pasta, 2 cups shredded cheddar cheese, 1 cup whole milk, 3/4 tsp kosher salt, 1/2 tsp freshly ground black pepper

Method: Place pasta, cheese, milk, salt and pepper into a microwave safe bowl. Stir to mix. Cover lightly with plastic wrap and microwave for 3 minutes. Stir and microwave for an additional 2 minutes. Stir until creamy and smooth. Eat immediately.
